Since taking my final steps into a cruelty free lifestyle almost six months ago, I have found that veganism has both opened up my mind and tastebuds to a vast selection of delectable goodness.
As a bit of a 'natural' in the kitchen, I have always felt comfortable in my ability to not let myself and anyone I live with perish from hunger. However, I did fear that embracing the vegan life would limit my once restricted repertoire that appealed to my texture-phobic mouth. Luckily, I was very wrong in my previous assumption.
Veganism has not only given me some peace with how I choose to live and see the world, but it has made me feel somewhat empowered in the kitchen. Gone are the days where I would refuse to amend a favourite recipe because 'that's not how it goes', or not consume a certain food due to its colour/size/smell. These days, and possibly due to not wanting to miss out on required vitamins and protein, I am like the Cookie Monster of vegetables and all things good for me. Nom, nom, nom...
And, much like this evening when I decided that I wanted a very vegie-full, gravy-based, homemade pie for dinner (and couldn't find a recipe that matched the image in my hungry head), I stepped into the cooking creation space and made it up.
Now, with a satisfied belly and the housemate/bestie wanting the "recipe", I can safely say that the cook was successful.
